I work in a very poor bakery, and while I hope they will be able to purchase some basic equipment soon, at the moment I need some ideas that don't require very much machinery. I'd love to make some good, from-scratch cinnamon rolls, but everything I've come across so far requires a bread machine or a food processor. Obviously, cinnamon rolls were being made before there were bread machines, but the recipes just tell me to use the 'dough' function and don't give me an idea of what is going on during that time! I'm willing to hand-knead the dough myself, but I could use some guidance. Sorry for the long and rambling question. Every time I follow a bread recipe closely, it never turns out quite right! My dough never rises like the books say it should, even when I follow the directions precisely. I don't have a bread machine, I'm using a basic elec. oven. The dough always stays kind of tough, even flaky sometimes, never yellowy or elastic. Ok I have a recipe for Hawaiian sweet bread. It calls for this 1 cup warm water 5 tbsp. white sugar 3 cups all-purpose flour 3/4 tsp. salt 2 tbsp. powdered milk 2 tbsp. instant potato flakes 3 tsp. yeast 1/4 tsp. vanilla extract 1/4 tsp. lemon extract 2 eggs 4 tbsp. butter or margarine ________________________ The only thing that I don't have is powdered milk or evaporated milk. So what can I use instead. Is regular milk ok? Oh and do I need to mix the yeast by package directions before adding it to the bread machine? ThanksIts active dry yeast. The only thing is I just found my manual on the machine, and it says "add yeast last" that it shouldn't be activated until its ready to be kneaded together. Cause I guess once it hits the liquid it activates it.Ok well My bread is almost done (5) min It looks great, but I won't know how it tastes for another 10-20 min. I just used 1 cup of milk instead of the 1cup water & powdered milk. I was gonna do the half milk half water, but my bf buys the fat free skim milk which has more water in it so. I hope it tastes good I will choose b/a when I taste my bread lol. more

So,we bought this bread machine. We've made white and wheat bread both,the recipe in the book that came with it.We've made like a total of 10 tries. But every time we make a loaf,it falls! I've monitored it to see when it falls and it falls about the time of the second rising.We've even tired using less yeast. Please help. What do I do? What am I doing wrong?Oh yes,we're using new bread machine yeast. We have done it EXACTLY how it says. Plus we have tried using...less yeast,more flour,everything we new.I mean knew.We have well water,which is not chlorine water or purified or anything.Just straight well water,ground water.Not "town" water. Voting Question: Making bread using stone-ground whole wheat flour..?

I recently bought a large amount of stone ground wheat flour from a local farm. I tried 2 recipes (I have tried both many times before using regular whole wheat flour with no problems) last night (buttermilk honey wheat bread, rosemary wheat bread) and neither loaf would rise properly. They both came out very dense. I'm wondering if I need to extend the rising time, or if that would even make a difference? The flour itself seems to be pretty coarsely ground, and the grains vary in size quite a bit. Also, I use a bread machine set to the dough cycle to mix/knead the ingredients and let it do it's 1st rise in there. Then I take it out, put it in a loaf pan and let rise again before baking. Any suggestions would help greatly, since I now have 15 lbs of this flour!! :) more

I used this recipe I got online (my son can have no dairy or soya so I couldnt use any that came with my breadmaker): 235 ml warm water (110 degrees F/45 degrees C) 25 g white sugar 7 g bread machine yeast 60 ml vegetable oil 410 g bread flour 6 g salt I found the bread came out too sweet so I know to reduce the sugar net time, but it was also a little chewy and heavy.
