Open Question: Boston Baked Beans--undercooked? Salvagable?
Last night I tried my hand at making some Boston Baked Beans from the Durgin-Park cookbook. I followed the recipe as written: 2 cups navy beans (soaked all day then boiled for 30 minutes, drained) 1/2 cup sugar 2/3 molasses 1/2 lb. salt pork 1 teaspoon dry mustard 1 teaspoon pepper 1 teaspoon salt (Looking online just now, I see that a lot of recipes call for some baking soda--this one did not.) Now here is where I changed it. The recipe says to bake them at 400 degrees for 4-4 1/2 hours. Instead, I put it in the crock pot and cooked them overnight (roundabout 9 hours) on Low. This morning, I checked on them (I had cooked them for a potluck at work). The sauce tasted wonderful, but the bean texture seemed very wrong. The beans still had a bite to them--not terribly soft. Were I to spoon these onto a plate, I'd have a bunch of pellet-like things with a sweet sauce. Not too appetizing--I decided I couldn't serve it and brought some potato salad instead. =( My wife took a taste and told me she thought they were very UNDERCOOKED, given that even 9 hours in a Low Crock-Pot isn't exactly 400 degrees for 4 hours. So, have I undercooked them? Given more time in the Crock-Pot, could I salvage these? Or did I mess it up? moreResolved Question: how much weight would i lose if................?

I have been seeing a lot of salads (green and pasta) that I would really like to try making for my family. But my husband can not stand raw onion. Normally I just cook the onion in a dish separately so I know that it is cooked as we like it, they have never been my favorite either. So how important is the red onion? I am on a very small budget and keep putting off trying these new recipes for fear of making something that is lacking because of the left out ingredient. But such recipes just keep popping up and getting my attention. So how important do you find the red onion in YOUR recipes? And what could I use instead if I pulled it out? What could I put in to lend flavor? I personally don't mind a bit of red raw in my salad, I like a bit of the flavor and understand why it is used. So what would you do? Please if you could give examples of "if a recipe has X (or is sweet in nature) I might throw in Y, or if recipe has Z( or is with potatoes) I would add W." <you understand?> Maybe you have a few favorite recipes that have raw red, tell me what they are and how you would substitute if someone was allergic, but you still wanted to make it. While doing this “fascinating” project I found out many things about Ancient Romans. The main staple of their diets, especially for the poor, was very watered down wine and bread. They drank this watered down wine with every meal and put wine in many of their dishes. They also liked mead and bear. Honey was used in most dishes as a sweetener, sugar was rarely used. They also ate a lot of cheese but no milk. Drinking plain milk or plain wine was considered barbaric. The poor ate a lot of gruel and hardly ever meat, but the rich did eat some meat. There were no refrigerators so anything that needed kept cold was either heavily salted or fairly fresh. Mostly people ate whatever was available. Food was actually like today’s food except much simpler, also they didn’t have many things that weren’t indigenous to their country. I'm making a recipe and it calls for white potatoes. Does this refer to a specific "species" or does it refer to the color of the flesh? The only types of potatoes I remember seeing at the grocery are: baking, yukon gold and new (red). It seems that the yukon gold is the candidate. Alright, so i think i messed up my diet. For breakfast today i had a small bowl of shredded wheat with strawberrys & banana slices in it w/ skim milk. For lunch i had a salad with grapes, apple slices and cashews in it but i think i over did the cashews because i ate alot of them. Then for dinner right now im eating 1 small Yam(sweet potato), bout a cup and a half of brown rice and a small piece of chicken. Also with that i had my a tiny bowl of my moms famous homemade mac and cheese. The mac and cheese was not fat free and she used whole milk, ick. If i feel hungry later i usually have some grapes. I usually eat breakfast on monday-friday at 6 am, lunch at 11, then dinner at 6pm. Because of school. on weekends i eat breakfast when i wake up at usually 8-8:30, lunch at 1pm and dinner at 6-6:30pm. i think the cashews and mac and cheese ruined it for me. Oh and i exercise in my room for a while i jog in place for like 10 minutes while moving my arms while jogging i also do crunches ct. i go to the gym 2 or 3 times a week. Im 18 years old and i was 132 lbs. now im 120. Im trying to hit 110 again. Any ideas on foods or recipes? Well, i am 15 years old, not over weight but i have puppy fat as i am in my teen years.I used to be stick thin until about 12, i wear bikinis and everything, i am not fat. But i would like a flat stomach and a healthy diet.I won't eat a lot, as my dad left when i was 5 and i haven't eaten the same since,got fussy and as mum had a breakdown wouldn't control much and i don't blame her.I love roast potatos,mash potato,schnitzel,pastas,chips,roasts are alright. But i won't eat vegies and salads. i love apples,bananas and oranges.I have a real sweet tooth and love lollies but i don't have a savoury tooth at all!! I also love my orange and apple juice but can't stand water although i will make myself drink it. Can anyone think of recipes for dinner that can involve foods i love or sugest meals etc with my foods and maybe some small vegies etc that i won't be able to taste. My boyfriend is 24 and is a Policeman, so his work patterns are very varied and sometimes means having his meals at a takeaway when he works overnight. This happens quite often. However even when he has a day off where meal times are normal, he prefers to eat pizzas, burgers, chips, boiled eggs, creamy desserts, cheese, pies, scotch eggs and as many sweets as he can handle. He does not like salad or vegetables (apart from roast or mash potatoes, and sweetcorn), and will only eat apples and grapes. I'm no angel myself, but really willing to change our diet, whereas he denies that his diet is poor. Also, he has a varicose vein on his thigh, which burst recently. I heard that poor diet and high salt intake can cause this? On Thanksgiving what all are you going to cook? (While I'm cooking I will have the Macy's parade on) I've got a Turkey, cornbread dressing, noodles, sweet potatoes, pumpkin pie, crescent rolls, cranberry salad, green beans, peas and carrots, mac and cheese, pasta salad, pecan pie, jello, I will be cooking all day, but I will love it!
